The sturgeon breeding in China started late in the 1990s, but the industry has developed rapidly. After just two decades of development, the sturgeon industry in China has grown from scratch, and has formed a complete industrial chain of "variety breeding breeding breeding processing". Since 2003, China has become the world's largest sturgeon farming country, with production increasing from 10,900 tons in 2003 to nearly 150,000 tons in 2023, contributing over 85% of global sturgeon farming and over 40% of international trade in sturgeon caviar, occupying an important international position.

The import of sturgeon caviar and sturgeon caviar substitutes in China is mainly high-end, and the import quantity is much smaller than the export quantity. Since 2018, the overall export of sturgeon has shown an upward trend. According to customs data, the export volume of sturgeon from January to June 2024 was 111723 kilograms, a year-on-year increase of 15.48%; The export value was 33,615,751 US dollars, a year-on-year increase of 14.31%. Sturgeon is exported to developed countries such as the United States and Europe in the form of caviar, and to countries such as Vietnam in the form of adult fish (meat). However, due to new management measures introduced by Vietnam, China's export of sturgeon to Vietnam through customs has basically stagnated since 2024.

There will be no imports of sturgeon in 2024. Sturgeon export markets are widely distributed, with an increase in the number of export countries to 42 by 2024. The market concentration is relatively high, with exports to the United States, Germany, Belgium, France, and Japan accounting for a total of 68.53%. In 2024, Belgium will surpass France to become one of China's top three export trading partners for sturgeon.
